Juicy burgers and grilled chicken sandwiches join forces with this white-meat patty. Don’t leave the page, hamburger lovers — ground chicken breast, though fairly lean and mildtasting, is wonderfully moist, tender, and delicious when seasoned and grilled to perfection.

Let the adobo mayonnaise sit for at least 30 minutes before serving so the flavors can develop, or make it up to 2 days ahead.
For the mayonnaise, blend mayonnaise, sugar, chipotle, adobo sauce, and lime juice in a small bowl; set aside.
Preheat grill to medium-high. Brush grill grate with oil.
For the burgers, season chicken with salt and pepper in a mixing bowl, combining gently with your hands. Shape into four ¾-inch-thick patties. Coat patties with nonstick spray and grill, covered, until an instant-read thermometer inserted into centers registers 165°, 4–5 minutes per side. Top burgers with cheese after flipping to melt.
Toast buns on the grill, covered, during the last minute of grilling. Serve burgers on buns with adobo mayonnaise and onions.
