Heat oil and butter in a sauté pan over medium-high. Stir in mushrooms, carrot, potato, and leeks; cook until crisp-tender, about 3 minutes.
Add chicken and peas and cook until heated through, about 3 minutes; stir in dill and chives. Season chicken and noodles with salt and pepper.
