Making brown butter

Making brown butter is a simple technique, yielding rich, nutty flavor. After the butter foams, the milk solids will turn golden, then brown. But keep your eye on them so they don’t burn, which can happen quickly.

Instructions

Cook farfalle in a pot of boiling salted water according to package directions; drain.

Meanwhile, melt 4 Tbsp. butter in a skillet over medium heat. Add cabbage, onions, and garlic; sauté until just tender, 57 minutes, stirring often, then season with salt and black pepper. Add chicken; cook until heated through and onions begin to caramelize, 810 minutes. Transfer cabbage mixture to a bowl.

Melt remaining 8 Tbsp. butter in same skillet over medium heat until lightly browned, 58 minutes. Stir in Worcestershire and pepper flakes; toss with farfalle, cabbage mixture, Parmesan, and parsley.
