Chicken & Bacon Burritos with Chipotle Dressing

It’s easy to see why burritos are a favorite American food — they’re an on-the-go complete meal. This adaptation of a BLT ups the flavor by including sautéed chicken breast, crispy cucumbers, and chipotle ranch dressing for the tastiest burrito this side of the Rio Grande.

Chipotle chiles are dried, smoked jalapeños. They add smoky, spicy heat to these burritos.

Instructions

Cook bacon in a sauté pan over medium heat until crisp. Transfer bacon to a paper-towel-lined plate. Drain all but 2 Tbsp. drippings.

Sauté chicken in drippings in same pan over medium-high heat until browned and cooked through, 8 minutes. Transfer chicken to a plate, tent with foil, and let rest 3 minutes.

Combine romaine, tomatoes, cucumber, and bacon in a bowl. Mix together ranch dressing and chipotle; toss with salad mixture and chill until ready to serve.

Heat tortillas in a large skillet, 1 minute per side.

To serve, divide chicken among tortillas, top with salad mixture, and roll tortilla over filling. Cut burritos in half on a diagonal and serve.
