California Steak Kebabs with Creamy Chive Sauce
With an abundance of fresh vegetables alongside lean protein, kebabs are a healthy way to enjoy the charred goodness of grilling. These steak kebabs use lean beef tenderloin skewered with onion, mushrooms, and cherry tomatoes for a quick and easy weeknight dinner. You can even prep the skewers ahead of time and refrigerate until ready to grill.
Greek yogurt is a healthy, protein-packed base for a creamy dipping sauce. Incredibly flavorful, this Creamy Chive Sauce is also great with grilled chicken and fish.
FOR THE KEBABS, THREAD:
FOR THE SAUCE, WHISK:
Preheat grill to medium-high. Brush grill grate with oil.
For the kebabs, thread beef, tomatoes, onion, and mushrooms onto skewers. Coat kebabs with nonstick spray and season with salt and pepper.
For the sauce, whisk together yogurt, chives, lemon juice, vinegar, garlic, zest, honey, and celery salt; season with salt and pepper.
Grill kebabs, covered, until beef is cooked through, 6–7 minutes, turning halfway through.
