The heat level builds slightly, but if you like your food a tad spicy, add 1 tsp. Cajun seasoning to the sauce.

Instructions

Cook farfalle in a pot of boiling salted water according to package directions. Reserve ½ cup pasta water, then drain farfalle.

Toss shrimp with 3 tsp. Cajun seasoning, salt, and pepper.

Heat oil in a sauté pan over medium-high. Add shrimp and cook until golden and opaque, 45 minutes; transfer to a plate. Add garlic; cook until fragrant, 30 seconds. Deglaze pan with vermouth, scraping up any brown bits; cook until nearly evaporated. Reduce heat to medium.

Stir in cream and remaining ½ tsp. Cajun seasoning; bring to a simmer. Reduce heat to low; stir in Parmesan and simmer sauce, stirring occasionally, until thickened, 35 minutes. Stir in farfalle, shrimp, tomatoes, parsley, and lemon juice until combined; season with salt and pepper. Add pasta water to sauce to reach desired consistency.
