Instead of schlepping a lot of toppings to your favorite cookout spot, just toss this butter log into the cooler. You can slice off portions as needed to plop atop your burgers as they come off the grill.

Instructions

Using an electric mixer, whip together butter, ketchup, chopped red onion, pickle, 1 1/2 tsp. mustard, and salt for condiment butter in a bowl until combined. Transfer butter to parchment paper and roll into a log, twisting ends of paper to tighten. Freeze butter until solid.

Preheat grill to medium-high; remove butter from freezer.

Combine beef, relish, minced onion, 2 Tbsp. mustard, and Worcestershire for burgers in a large bowl.

Shape beef into eight patties; season with salt and pepper. Grill burgers, covered, until they reach 160° on an instant-read thermometer, about 5 minutes per side.

Slice 1/4-inch-thick rounds of butter from log. Immediately place one slice on each burger and let butter melt. Serve burgers on buns with shredded lettuce, dill, parsley, and tomato slices.
