Basic Chicken Salad
This chicken salad is all about “less is more.” The ingredients are simple, but the really big deal is that it’s made with light mayonnaise and plain yogurt— low in calories and tastes good!
For the chicken salad —
For cherry-cashew variation, stir in:
Combine chicken, celery, mayonnaise, yogurt, parsley, scallions, lemon juice, salt, and pepper in a bowl. Chill salad until ready to serve. Salad may be made one day ahead.

Pull the chicken off the bones in large pieces, discarding fat and skin; cut chicken into large chunks.
Mix chucks of chicken with remaining salad ingredients and chill until ready to serve. Salad can be made one day ahead.
