Asha's Winter Chili

This uniquely spiced chili tastes great, even when reheated the next day. Another delicious way to enjoy this chili is served over tortilla chips.

By its appearance, Asha Gomez’s Winter Chili resembles every other chili out there — meat, beans, and tomatoes — you get the gist. But after just one bite, you’ll realize it’s so much more. The secret ingredient here is garam masala. There are many variations of the Indian spice blend — it can include a blend of coriander, black pepper, cumin, cloves, nutmeg, cinnamon, mace, cardamom, dried chiles, fennel, and other spices. While not your typical chili seasonings, this unique chili will stand out from all the rest and keep you coming back for more.

Heat a large Dutch oven over medium-high. Add oil; stir in onion, mix well, and cook until onion starts getting translucent, 23 minutes.

Add bell pepper, garlic, and jalapeño; cook until onion becomes golden brown, 3 minutes more. Add garam masala, paprika, and salt, stir so that all the spices coat the onion, pepper, and garlic; cook 1 minute then add ground sirloin.

Using your spoon, mix and break down ground sirloin thoroughly, continuously stirring, and cook 3 minutes more. Add crushed tomatoes and brown sugar; mix well.

Add kidney beans and black beans and mix well. Lower heat to medium-low, cover Dutch oven, and cook chili 25 minutes. Remove lid, add corn and stir well, cook 3 minutes more.

Serve chili with a dollop of sour cream, Cheddar, and scallions.
