Watermelon & Blackberry Granita with Rum & Mint
In the middle of summer, fresh fruits, like watermelon and blackberries, beg to be puréed and frozen into this boozy granita with rum and mint. Want to have a large batch of this tasty frozen treat? Double the ingredients, and place in a 7×11-inch baking dish to freeze
Purée watermelon and blackberries in a food processor; strain through a fine-mesh sieve, pressing solids to extract as much juice as possible. Discard solids.
Combine extracted juices, rum, agave, lime juice, mint, and salt in an 8×8-inch baking dish; freeze until solid, 6–8 hours, or overnight.
Scrape granita with a fork and scoop into serving dishes.
