Plum & Cherry Shrub Punch
Savor the fresh fruit of summer with this Plum & Cherry Shrub Punch. A shrub is a concentrated combination of fruit, sugar and vinegar, used to flavor cocktails. They require a bit of time to marinate, so make sure to plan ahead when making this recipe.

If you can’t find fresh cherries, frozen cherries will work, too. Just make sure to thaw them before using.
Peel lemon with a vegetable peeler (do not include white pith).
Crush plum, cherries, lemon peel, and sugar in a glass bowl; let sit 30 minutes. Stir in vinegar, cover, and refrigerate at least 48 hours.
Strain shrub through a fine-mesh sieve, pressing solids to extract as much juice as possible. Discard solids.
Combine shrub, vodka, and club soda; serve over ice.
