If you can’t find fresh cherries, frozen cherries will work, too. Just make sure to thaw them before using.

Instructions

Peel lemon with a vegetable peeler (do not include white pith).

Crush plum, cherries, lemon peel, and sugar in a glass bowl; let sit 30 minutes. Stir in vinegar, cover, and refrigerate at least 48 hours.

Strain shrub through a fine-mesh sieve, pressing solids to extract as much juice as possible. Discard solids.

Combine shrub, vodka, and club soda; serve over ice.
