Mudslide Fudgesicles with a Chocolate Shell

One of the best ways to cool off on hot summer days is with a good, old-fashioned popsicle. But word to the wise — these are for those ages 21 and above. If you’re a kid at heart, these boozy Mudslide Fudgesicles will remind you of the chocolate treats from the dog days of your childhood.

If you’re torn between using Bailey’s Irish Cream or Kahlúa in these popsicles, you can use both by using 2 Tbsp. of each liqueur.

Instructions

For the fudgesicles, melt chocolate in a saucepan over low heat. Whisk in half-and-half, sugar, cornstarch, cocoa powder, and salt; increase heat to medium and cook until thickened, 10 minutes.

Off heat, stir in Bailey’s and vanilla; divide among six 3-oz. popsicle molds. Secure popsicle sticks according to manufacturer’s instructions, and freeze until firm, at least 4 hours.

For the chocolate shell, melt chocolate and coconut oil in the microwave, stirring every 30 seconds until smooth. Unmold popsicles, then drizzle with chocolate shell, sprinkle with cookie crumbs, and freeze until chocolate sets, 5 minutes more.
