Trail mix is all fine-and-dandy, but make it even better (and less messy) by packing it into portable bars for on-the-go snacking. Full of healthy fats and sugars from nuts and dried fruit, these naturally sweetened bars are both filling and satisfying.

Make sure to work quickly when mixing the hot syrup with the nut mixture, because it begins to cool and harden immediately.

Instructions

Line an 8×8-inch pan with parchment and coat with nonstick spray.

Toss together almonds, cranberries, peanuts, coconut, and sunflower kernels in a bowl.

Heat corn syrup and honey in a small saucepan over mediumhigh to a boil, stirring occasionally; boil 2 minutes.

Off heat, stir in vanilla and salt, then pour over nut mixture; quickly stir until evenly coated.

Press nut mixture into prepared pan using the back of a measuring cup coated with nonstick spray. Chill nut mixture until it sets up, then cut into 12 bars.
