Plum Trifles with Amaretti Cookies

Healthy desserts that are actually satisfying can be hard to come by — but not with this fruit trifle. Layers of yogurt, almonds, amaretti cookies, and a sweet red wine syrup complement the flavor of ripe plums. Feel free to use any stone fruits you like in place of the plums.

Heat wine, honey, and salt in a saucepan over medium-high to a boil. Add plums, reduce heat to medium-low, and simmer until softened, 45 minutes; stir in almond extract, then transfer to a bowl and chill until cold. Strain plums through a sieve, reserving wine mixture.

Assemble trifles by placing about 1 Tbsp. wine mixture in the bottom of six parfait dishes. Top with half the cookies, half the plums, and a heaping 1 Tbsp. each yogurt and almonds; repeat process once more.
