Dice the pears to consistently sized pieces so they bake at the same rate.

Instructions

Preheat oven to 350°. Coat a 7×11- inch baking dish with nonstick spray.

For the sauce, heat 6 Tbsp. butter, 1 cup brown sugar, golden syrup, and ½ tsp. salt in a medium saucepan over medium-high; bring to a boil and cook 1 minute. Whisk in cream and boil 1 minute more; remove sauce from heat.

For the fruit, toss pears with lemon juice and 2 Tbsp. flour. Pour 1 cup sauce over pears; stir to coat and pour mixture into prepared dish.

For the streusel, combine 1⅓ cups brown sugar, 1 cup flour, oats, 1½ sticks butter, cinnamon, and 1½ tsp. salt. Sprinkle streusel evenly over pear mixture. Bake crisp until edges are bubbly and pears are tender, 4550 minutes. Let crisp sit 3045 minutes.

Serve crisp with ice cream and the remaining sauce.
