Instructions

Preheat oven to 300°. Coat a 9×13-inch baking dish with nonstick spray.

Stale bread on a baking sheet in oven until dried out, 30 minutes.

Blend eggs, half-and-half, brown sugar, 1 Tbsp. vanilla bean paste, and cinnamon in a bowl using an immersion blender or hand mixer. Add staled bread and toss to coat; let sit 3045 minutes. Increase oven temperature to 350°.

Layer half the bread mixture in prepared dish; top with 4 oz. chocolate and half the pears.

Repeat layering with remaining bread mixture, 4 oz. chocolate, and pears; top with 4 Tbsp. butter. Bake bread pudding until center is set, about 1 hour; transfer pudding to a rack and let sit 2030 minutes.

Simmer ¾ cup cream over medium-low heat. Pour hot cream over remaining 6 oz. chocolate and remaining 1½ Tbsp. butter; let sit 5 minutes, then whisk in remaining 1 tsp. vanilla bean paste until smooth.

Serve bread pudding with sauce and whipped cream.
