Grilled Fruit Salad with Grilled Pound Cake

No gathering is complete without some sort of fruit salad. But for this one, put your grill to work. With the sweet-and-sour honey-lime dressing, this will be a real crowd-pleaser. And, forget the marshmallows and coconut. Serve this fruit salad over grilled pound cake for something that’s akin to a fruit panzanella or grilled fruit shortcake. No matter what you call it, you won’t be able to put your fork down.

To keep the pound cake from getting soggy, let your guests top their own cake with the fruit salad.

Instructions

Preheat grill to medium. Brush grill grate with oil.

For the salad, grill pineapple, mangoes, and peaches until grill marks appear, about 2 minutes per side. Once cooled, chop fruit into bite-sized pieces. Grill pound cake until lightly charred, 12 minutes per side.

Combine grilled fruit, strawberries, and kiwis in a bowl.

For the dressing, whisk together honey, lime juice, and zest; toss with fruit to coat. Serve fruit salad over pound cake.
