Line an 8×8-inch baking pan with parchment and coat with nonstick spray. Reserve 2 Tbsp. shredded coconut for topping.
Pulse dates, remaining shredded coconut, macadamia nuts, cacao nibs, sugar, and salt in a food processor until ingredients are crumb-sized. Add coconut oil and water; pulse until mixture begins to clump together.
Press coconut mixture firmly into prepared pan; sprinkle reserved 2 Tbsp. shredded coconut over top, pressing to adhere. Freeze bars until set, 15–20 minutes, before slicing. Store bars in refrigerator or freezer.
