Heat cherries, water, and sugar in a saucepan over medium-high; bring to a boil for 2 minutes, then crush cherries and return to a boil.

Whisk together lemon juice and cornstarch; whisk into boiling cherry mixture and cook sauce until thickened, 1 minute.

Off heat, stir in ¼ tsp. almond extract and salt; let sauce cool to room temperature.

Preheat oven to 350°. Coat an 8×8-inch baking dish with nonstick spray.

Place half the bread cubes in prepared dish; top with ¼ cup cherry sauce, then top with remaining bread cubes.

Whisk together evaporated milk, 2% milk, ¼ cup honey, egg, and ¼ tsp. almond extract; pour over bread cubes.

Press bread cubes into liquid; top with ¼ cup cherry sauce.

Bake pudding until bread is lightly toasted and liquid is absorbed, about 35 minutes. Let pudding stand 15 minutes before serving with crème fraîche and almonds.
