Tater Tot Breakfast Pizza
Everyone loves breakfast pizza, but add tater tots to the mix and you're sure to have a hit breakfast or brunch recipe.
Preheat oven to 425°. Coat a 12-inch cast-iron skillet with nonstick spray; place in oven to preheat.
Arrange Tater Tots in a single layer on the bottom of preheated skillet, then line the sides; bake 20 minutes.
Whisk together eggs and milk.
Heat oil in a nonstick skillet over medium. Add onion and bell pepper; cook until vegetables begin to soften, 3 minutes.
Stir in eggs and cook until they’re just set, 5 minutes; season with salt and pepper.
Remove cast-iron skillet from oven and slightly mash tots with the back of a measuring cup to form a crust. Top crust with 1 cup Cheddar, sausage, egg mixture, remaining Cheddar, and bacon.
Bake pizza 10 minutes; top with scallions and serve with hot sauce.
