This recipe can easily double, but you’ll need to divide the granola mixture between two baking sheets.

The best part about granola is that the recipe is very malleable. With simple ingredient swaps — seeds, dried fruits, sweeteners, and oils — you can easily turn this granola into your own version with little effort.

Instructions

Preheat oven to 350°. Line a baking sheet with parchment.

Whisk together oil, syrup, vanilla, and salt in a bowl.

Stir in oats, cereal, coconut, pepitas, sunflower seeds, and flax seeds until combined.

Spread granola in an even layer onto prepared baking sheet.

Bake granola, stirring occasionally, until golden brown and dry, 30 minutes.

Stir dried fruit and cacao nibs into granola; cool completely on baking sheet. Store granola in an air-tight container.
