Breakfast sausage and cheese fill these Huevos Rancheros Omelets, while salsa and beans round out the plate for a hearty breakfast. For a dinner option, you might swap chorizo for the sausage.

For the filling, brown sausage in a skillet over medium-high; transfer to a paper-towel-lined plate.

For the sauce, heat salsa and beans in a saucepan over medium until warmed through. Stir in ¼ cup cilantro, reduce heat to low, and keep sauce warm.

For the omelets, whisk together 3 eggs and 1 Tbsp. sour cream for one omelet;

Pour egg mixture into skillet and season with salt and pepper. Immediately begin gently shaking the skillet back and forth while making small, quick stirring motions. Reduce heat to low when eggs no longer run but are still moist.

Add one-fourth of sausage and cheese in a line perpendicular to the skillet handle. Fold one-third of the omelet over the filling, then slide the exposed third of the omelet from the edge of the pan onto a serving plate, folding the rest of the omelet over on it. Let omelet rest 1 minute before serving.

Spoon one-fourth sauce onto a serving plate, top with omelet, a dollop of sour cream, and chopped cilantro. Repeat procedures to make three more omelets.
