Turkey & Noodles Stir-Fry

Put some life back into the leftover holiday turkey with this fun and creative stir-fry. This dish is packed with flavor, but if you like things a little on the spicier side, add more sambal oelek or serve with Sriracha sauce.

Instructions

Whisk together soy sauce, sesame oil, and sambal oelek for the sauce.

Heat vegetable oil in a sauté pan or wok over medium-high. Add turkey and bell peppers and cook until peppers soften, 3 minutes. Add scallion whites and light greens, garlic, and ginger; cook until fragrant, 1 minute.

Stir in sauce; heat 1 minute. Add noodles and cook until heated through, 1 minute.

Off heat, stir in cabbage and scallion greens. Top servings with peanuts.
