Using a higher-fat ground beef results in a meatloaf that’s a tad too greasy.

Instructions

Preheat oven to 400º. Coat a 9×13-inch baking sheet (rimmed quarter sheet pan) with nonstick spray.

Sprinkle panko evenly on bottom of baking sheet.

Combine ground beef, diced tomatoes, onions, bell peppers, oats, ½ cup parsley, eggs, garlic, salt, and pepper; pat into prepared baking sheet, evenly spreading meatloaf all the way to the edges and corners.

Whisk together ketchup, brown sugar, mustard, and Worcestershire; spread glaze over meatloaf.

Bake meatloaf until lightly browned and a thermometer inserted into center registers 160°, 2025 minutes.

Preheat broiler to high with rack 6 inches from element.

Broil meatloaf until glaze caramelizes, about 3 minutes. Cut meatloaf into squares; top servings with parsley.
