Spicy Ground Chicken with ramen noodles

Spicy Chicken and Ramen Noodles delivers. It's quick and easy enough for a weeknight meal, not to mention totally addictive. Using a paella-like technique, you get lots of crispy bits of chicken throughout.

Cook ramen in a pot of boiling salted water until al dente, about 3 minutes; drain, rinse, and drain again.

Whisk together soy sauce, mirin, vinegar, chili garlic sauce, and sugar.

Heat oil in a 10-inch cast-iron skillet over medium-high. Add ground chicken, pressing it with a wooden spoon into a thin, even layer; top with ginger and garlic and season with salt and pepper. Cook chicken, without stirring and occasionally pressing it down, until bottom browns, 57 minutes. Add scallion whites; break up chicken with a spoon and cook, stirring occasionally, until it’s cooked through, 12 minutes more.

Stir in soy sauce mixture until heated through, about 1 minute. Toss in ramen and peas until combined.

Top servings with scallion greens and cashews.
