How to Track Broth Usage When Making Risotto

Tracking Broth in Risotto Here’s an easy way to remember how much broth you’ve added to a risotto. Before cooking the rice, count out one nut (or raisin or small candy) per 1/2-cup of broth you plan to use. Figure on using 8 nuts for the Butternut Squash Risotto or 14 nuts for the Risotto Confetti. For each 1/2-cup broth you add, eat a nut. When the nuts are gone, you know you’re done!
