How to Pit & Dice a Mango

When dicing a mango, it’s helpful to start with a brief anatomy lesson. In the center of the fruit is a large flat pit. On both sides of the pit are two fleshy sections. Cut off these portions to form two “lobes.” Don’t slice too close to the pit as the flesh nearest the pit is firmly attached and tends to be very stringy.

 

    To dice, make crosshatch cuts in the flesh, taking care not to go through the peel. Turn the mango “inside out,” then cut the cubes off the peel.
