Essential Steak with Crisp Green Salad
This hearty recipe is just the ticket for a satisfying meal. You can put a dinner for two — including steaks, sauce, and salads — on the table in 15 minutes flat, guaranteed!
Sauté steaks in vegetable oil in a nonstick skillet over medium-high heat for 3 minutes per side. Remove from heat; let steaks rest for 3 minutes.
Add 2 Tbsp. shallots to same skillet; sauté until translucent, about 1 minute. Add balsamic vinegar; cook until liquid is reduced by half, about 1 minute. Pour sauce over steaks; garnish with blue cheese.
Whisk together wine vinegar, olive oil, remaining 1 Tbsp. shallots, and Dijon in a bowl. Season with salt and pepper. Toss greens with vinaigrette. Serve with steaks.
