A crostata [kroh-sta-TAH] is an Italian free-form pastry that is baked on a baking sheet or stone instead of inside a pie plate or tart pan. Did we confuse you yet? In plain terms, roll the dough out flat, pile the filling (typically fruit) into the center of the dough, then fold the dough up around the filling. And what’s so great about that, you ask? We love the simplicity and rusticity about it. It’s OK if the crust cracks or fruit juices leak out. As long as you have tasty fruit and good dough, it always bakes into one delicious (and gorgeous!) dessert.

For the Crostata Dough:

Pulse flour, sugar, and salt in a food processor until combined.

Add butter and pulse into small chunks for a sandy mixture.

Combine egg yolk and 2 Tbsp. water; pour into food processor and pulse until dough just starts to cling together, adding remaining 1 Tbsp. water if necessary. Dump dough chunks onto a work surface and gather, pressing so they hold together in one mass.

Knead dough until smooth; wrap in plastic wrap, then flatten into a disk. Chill dough at least 1 hour or up to 3 days.

Roll dough on lightly floured parchment paper into a 12-inch circle with a lightly floured rolling pin. Transfer parchment and dough to a baking sheet.

For the Black & Blue Mango Crostata:

Preheat oven to 375°.

Combine granulated sugar and lime juice in a bowl; toss in mango, blackberries, and blueberries until coated. Sprinkle tapioca over mango mixture, stir until distributed.

Spread graham crumbs onto center of rolled dough, leaving a 2-inch border around the edges. Spoon mango mixture onto graham crumbs.

Fold dough edges over filling, leaving middle exposed. Brush egg wash onto dough edges then sprinkle with sparkling sugar.

Bake crostata until filling is bubbly and crust is golden, 4045 minutes; let cool to room temperature.
