Yellow Squash Noodles & Tomato Sauce

Side Dishes

Yellow Squash Noodles & Tomato Sauce

Trade the classic pasta and serve spiralized yellow squash with a hearty tomato sauce and fresh mozzarella. It's the perfect accompaniment to this Pork Parmesan. If you happen to have an abundance of zucchini in your garden, feel free to spiralize it into noodles instead of the yellow squash.

Instructions

Sprinkle squash generously with salt, tossing to coat, then drain in a sieve set over a bowl; rinse and dry in a salad spinner.

Sauté mushrooms in oil in a 10-inch cast-iron or nonstick skillet over medium-high heat until beginning to brown, 3 minutes. Add shallots, garlic, and pepper flakes; sauté until shallots and garlic begin to brown, about 2 minutes, stirring frequently.

Stir in squash, tomatoes, marinara, and tomato paste; bring to a boil. Reduce heat to medium-low and simmer until squash is tender, 3 minutes; stir in mozzarella. Serve squash and sauce with Pork Parmesan.
