These thick-cut fries are perfect for dunking either in the deeply flavored Texas-Style Chili itself or in the kicked-up Monterey Jack cheese sauce.

Preheat oven to 450° with a baking sheet inside.

For the fries, toss together fries, cumin, and zest; transfer to hot baking sheet. Bake fries according to package directions until crisp.

For the sauce, melt butter with pepper flakes in a large saucepan over medium. Whisk in masa harina and cook 12 minutes.

Gradually whisk in milk until smooth. Bring mixture to a boil; reduce heat and simmer until thick, 23 minutes. Whisk in cheese until melted. Season sauce with salt and lime juice; keep warm.
