Creamed Swiss Chard with bacon

Move over, creamed spinach: Creamed Swiss Chard is our new favorite way to serve greens at the holiday table. Bacon, garlic and cheese add flavor, while the greens provide excellent color and texture.

Separate chard stems and leaves. Thinly slice stems and chop leaves into 1-inch pieces.

Cook bacon in a sauté pan until crisp; transfer to a paper towel-lined plate, reserving drippings in pan.

Cook chard stems, onion, and garlic in drippings over medium heat until softened, 45 minutes. Stir in chard leaves; cook, stirring often, until beginning to wilt, then stir in bacon and remove from heat.

Melt butter in a saucepan over medium heat; stir in flour and cook 12 minutes. Slowly whisk in half-and-half; bring to a boil. Reduce heat to low, whisk in Parmesan and mozzarella; simmer sauce, whisking until smooth and thickened, 24 minutes. Whisk lemon juice into sauce; season with salt and pepper. Stir sauce into chard mixture.
