Preheat oven to 375°. Coat a 3-qt. baking dish with nonstick spray.

Melt butter in a sauté pan over medium heat; add onions and celery and cook until soft, about 5 minutes.

Toss in bread cubes, then stir in 2½ cups broth, milk, sage, parsley, thyme, salt, and pepper; bring to a boil. Reduce heat to medium-low; simmer bread mixture until liquid is absorbed.

Whisk together eggs and remaining ½ cup broth; off heat, gradually stir into bread mixture then transfer to prepared dish. Bake dressing until set, 4045 minutes.
