Arugula-Kumquat Salad with Orange-Currant Vinaigrette

One seasonal gem is kumquats. Like tiny oranges, they’re small oval-shaped citrus fruit with thin, sweet skins and tart flesh. Often candied or used in jams, here they’re thinly sliced, with their skins intact, and tossed with fresh peppery arugula for a fresh side dish. Dressed with an orange juice-currant vinaigrette, all this salad needs is some toasted walnuts to finish it.

For the vinaigrette, combine currants and orange juice in a microwave-safe bowl; microwave on high until juice starts to bubble, 1 minute, then let cool 5 minutes. Whisk in oil, vinegar, and Dijon; season with salt and pepper.

For the salad, toss arugula, kumquats, and walnuts with vinaigrette.
