Preheat broiler to high with rack 6 inches from element.

Heat oil in a skillet over medium-high; add spinach, a handful at a time, and cook until beginning to wilt before adding more; season with salt and pepper.

Place bread slices on a baking sheet; broil until lightly toasted, 2 minutes per side.

Spread bread slices with Dijon; top with ham, spinach, and cheese. Broil tartines until cheese melts and begins to brown, 23 minutes.
