For the reduction, heat balsamic, honey, and orange peel in a saucepan over medium to a boil. Reduce heat; simmer balsamic until bubbly, thick, and syrupy, 34 minutes. Discard peel.

For the bites, arrange cantaloupe cubes on a platter; top with basil leaves and speck. Skewer bites with toothpicks, then drizzle with desired amount of balsamic reduction; serve immediately.
