Instant Pot Creamy Hummus

Instant Pot Creamy Hummus is a snack that packs plenty of fiber and protein. Plus, it's nutritious and satisfying enough to make a complete meal, together with fresh veggies and pita bread for dipping. Best of all, the Instant Pot takes the work out of rehydrating dried chickpeas, so this healthy spread will be ready to enjoy in a fraction of the time.

For the smoothest texture, be sure to mince the chickpeas and garlic before adding the other ingredients.

Instructions

Add chickpeas, water, and baking soda to Instant Pot.

Close lid, lock Pot, select "Manual" (or "Pressure Cook") setting and 40 minutes time.

Pressure cook chickpeas until time is up, then natural release, 10 minutes. If lid hasn’t unlocked, release excess steam and remove lid. Reserve 1 cup chickpea liquid, then drain chickpeas. Add chickpeas to a bowl of cold water; skim away any skins that float to the surface, then drain again.

Mince chickpeas and garlic in a food processor. Add tahini, lemon juice, cumin, and paprika; purée, adding reserved liquid, a little at a time, to reach desired consistency.

Season hummus with salt and drizzle with oil. Serve hummus with fresh vegetables and pita bread.
