Vanilla beans should be soft & pliable, supple and almost feel oily to the touch. Store in an airtight container in a cool, dark place—never in the refrigerator or freezer!

If you happen to have a dried-out vanilla bean, don't toss it. Soak it in filtered water for 8 hours. You'll end up with a completely hydrated (and now usable) vanilla bean.
