Choosing Fresh Sweet Corn
Fresh corn is one of the sweetest parts of summer. Here are some tips on how to choose the ripest, sweetest ears.
There's nothing so disappointing as bringing home and husking sweet corn, just to find that it's not the best ear. Keep these things in mind when choosing your corn:
- 1. Look for silk that's pale in color, a little sticky, and brown at the very tips.
- 2. The tops of the ears should feel filled in with kernels developed right to the ends.
- 3. The cut at the bottom of the ear should be fresh, moist, and free of spots. Old cuts take on a rusty look.
- 4. Ripe kernels release a milky juice. An overripe ear is dry and tough.
