Spiced Cheesy Flatbreads

Topped with sumac, a fruity-tasting spice grown throughout the Middle East and parts of Italy, these Spiced Cheesy Flatbreads are the perfect counterpart to the soup and their texture is ideal for soaking up every last drop of this Ratatouille Soup.

Sumac is a fruity yet astringent spice that comes from the dried berries of the sumac bush. It’s sold ground or in its dried berry form. Sumac tastes great sprinkled on vegetables, meats, fish, and chicken. Sumac adds that little something extra and takes these flatbreads from drab to fab.

Preheat broiler with rack 6 inches from element. Line a baking sheet with foil.

Brush both sides of flatbreads with oil and place on prepared baking sheet. Broil flatbreads until lightly toasted, 12 minutes per side.

Sprinkle ¼ tsp. sumac and 1 oz. mozzarella pearls on top of each flatbread. Broil flatbreads until cheese melts, 12 minutes; sprinkle with basil and cut into wedges.
