Portuguese Vegetable Salad with Smoked Paprika Croutons
This crisp veggie salad, with its cooling cucumbers and sweet bell peppers and smoked paprika croutons, is the perfect complement to the spicy Piri Piri chicken.

For the croutons, heat oil in a nonstick skillet over medium. Stir in garlic and paprika; cook until fragrant, 1 minute. Add baguette cubes and cook until toasted, 3–4 minutes, stirring occasionally. Season croutons with salt and pepper; transfer to a plate.
For the vinaigrette, whisk together lemon juice, oil, vinegar, and capers; season with salt and pepper.
For the salad, toss tomatoes, cucumber, bell pepper, jalapeño, cilantro, and croutons with vinaigrette.
