The longer this salad sits, the more flavorful it becomes, so plan on making it in advance.

Instructions

Combine sugar, vinegar, salt, and pepper flakes for the dressing in a bowl; set aside.

Slice cucumber halves into thin slices to yield of 2–2½ cups.

Toss cucumber and onion slices with dressing until well coated. Chill salad until ready to serve. Salad can be prepared up to 1 hour ahead.

Use a mandoline held over a bowl to cut the cucumber into very thin, even strips. If you don't have a mandoline, slice the cucumbers with a knife.
