Pickled Cucumber Salad
Crisp and refreshing, this pickled cucumber salad comes together in no time. And the combination of vinegar, sugar, pepper flakes, and onion hits all the flavor receptors in your mouth for an explosion of flavor with each bite.
The longer this salad sits, the more flavorful it becomes, so plan on making it in advance.
Combine sugar, vinegar, salt, and pepper flakes for the dressing in a bowl; set aside.
Slice cucumber halves into thin slices to yield of 2–2½ cups.
Toss cucumber and onion slices with dressing until well coated. Chill salad until ready to serve. Salad can be prepared up to 1 hour ahead.
Use a mandoline held over a bowl to cut the cucumber into very thin, even strips. If you don't have a mandoline, slice the cucumbers with a knife.
