Peanut Rice Noodles with Romas & Scallions

These noodles make a great base for our Indonesian Chicken Soup for a tropical take on classic chicken noodle soup. Simply ladle the soup over the prepared noodles for even more flavor.

There are several varieties of rice noodles used in Asian cuisines. Cooking times and methods vary, so be sure to follow package directions.


Cook noodles according to package directions; drain, rinse well, and transfer to a bowl.

Heat oil in a skillet over medium. Add scallion whites and cook until softened, 2 minutes.

Add tomatoes, scallion greens, and lime juice and cook until heated through; season with salt and pepper flakes.

Toss noodles with tomato mixture and peanuts.
