Green Beans & Cabbage Slaw with Warm Bacon Dressing

Blanch beans in a pot of boiling salted water just until tender, 45 minutes; immediately transfer to a bowl of ice water to stop the cooking, then drain well.

Cook bacon in a sauté pan until crisp; transfer to a paper-towel-lined plate and pour off all but 2 Tbsp. drippings.

Stir in vinegar and sugar; bring to a simmer over medium heat. Add cabbage and onion; cook until softened, tossing with tongs, about 3 minutes. Stir in beans until heated through. Off heat, stir in carrots and bacon, season with salt and pepper, then serve slaw warm.
