Turkey Rachel Sandwich with Russian Dressing & Slaw

Take one ingredient — turkey — and turn it into an amazing sandwich ... any time of year. Classic Reuben sandwiches become “Rachels” when you swap sauerkraut for fresh, tangy slaw and turkey takes over for corned beef — and an out-of-this-world Russian dressing ties it all together. Be sure to serve any remaining slaw and dressing on the side.

For the coleslaw, whisk together vinegar, 1 Tbsp. lemon juice, mustard, sugar, and dill. Stir in cabbage; season with salt and pepper.

For the dressing, whisk together mayonnaise, sour cream, ketchup, 1 Tbsp. lemon juice, onion, horseradish, Worcestershire, and Tabasco;season with salt and pepper.

Preheat double burner griddle (or two cast-iron skillets) over medium.

For the sandwiches, spread heaping 1 Tbsp. dressing on each bread slice, then top with a slice of cheese. Place heaping ⅓ cup slaw on 4 cheese slices; top with 3 oz. turkey and remaining 4 slices bread, dressing side down.

Melt butter on griddle; add sandwiches and grill until cheese melts, 34 minutes per side.

To keep things from getting messy, transfer and flip sandwiches on a baking sheet, then return to griddle.
