Tahitian Shrimp Soup with Pineapple
Tahitian Shrimp Soup gives you a taste of the tropics right in your own kitchen, no matter the time of year. With the classic background flavors of garlic, ginger, and scallions, the seafood soup has fresh pineapple and shrimp to bring the beach vibes in.
Heat oil in a pot over medium. Add scallion whites, garlic, and ginger; cook until fragrant, 2 minutes. Add bell pepper; cook until softened, 3 minutes.
Stir in broth and soy sauce and bring to a boil over high heat. Reduce heat to medium and add shrimp, pineapple, and water chestnuts; simmer soup until shrimp are cooked through, 2–3 minutes.
Stir in scallion greens. Season soup with salt and pepper flakes; serve with rice.
