Put a new spin on the classic pairing of pork chops and applesauce with an unexpected twist for a nearly effortless dinner. Pork and apples are a tried-and-true combination. Since there’s no need to fix something that isn’t broken, the same components come together again in this meal.

The twist in this dinner is that the apples are paired with the vegetables, then the chops are roasted right on top of them for bigger flavor. That also means you only need a skillet and a baking sheet for cooking, making cleanup a breeze.

To add even more flavor to this dish, start with the Bacon-Roasted Cauliflower, then use the same skillet to sear the pork chops and make the sauce.

Instructions

Preheat oven to 450°.

For the pork chops, heat bacon drippings (in same skillet used to cook bacon, see right), over medium-high. Sear pork chops 2 minutes per side. Remove pork chops from skillet and place on top of Bacon-Roasted Cauliflower in oven during the last 6 minutes of roasting.

For the sauce, whisk together apple juice and cornstarch.

Deglaze same skillet with apple juice mixture over medium-high heat; scrape up any browned bits. Whisk in thyme and season with salt and pepper. Simmer sauce until thickened, 56 minutes, then spoon over pork chops.

Roasting the chops on top of the vegetables flavors them with more drippings from the chops.

Whisk cornstarch into apple juice to form a slurry for deglazing the pan and thickening the sauce.
