Hay & Straw Pasta with Chicken
Hay and straw is a classic dish made with a combination of regular and spinach pastas. Although their flavor differences are subtle, the color contrast makes a beautiful presentation.
Cook spaghetti in a pot of boiling salted water according to package directions; drain.
Heat oil in a skillet over medium-high. Add prosciutto and cook until crisp, 3–4 minutes; transfer to a paper-towel-lined plate. Add chicken to skillet and cook until browned and cooked through, 5 minutes; transfer to a plate and tent with foil.
Combine spaghetti, chicken, tomatoes, mozzarella, basil, and prosciutto.
