Cowboy Steak Sandwiches with Poblano Corn Relish

Steak sandwiches are loved by almost anyone. This recipe capitalizes on the beefy flavor of sirloin, but almost any cut can stand in.

Preheat grill, grill pan, or cast-iron skillet to medium-high.

Combine all ingredients for the relish in a bowl; chill.

Mix together chile powder, brown sugar, 1 tsp. salt, and black pepper; rub onto both sides of sirloin. Grill to desired doneness, about 5 minutes per side for medium-rare. Remove steak from grill; let rest 5 minutes before thinly slicing against the grain.

Slice bread into eight 1-inch-thick slices. Brush with oil; grill until toasted.

Toss lettuce with oil; season with salt. To assemble, divide lettuce among 4 bread slices, arrange steak slices on lettuce, spoon relish over top, and cover with another slice of bread.
