Couch Potato Soup

All your favorite goodies come together to make the couchiest of potato soups. Step right up to take an indulgent spoonful. A tongue-in-cheek dream food for a couch potato, this soup is a snack foodo-rama all rolled into one. It’s perfect for game-day, tailgating, or any day.

The ultimate couch potato’s dream is finally here, in soup form. Essentially a creamy, cheesy potato soup, this comforting soup has all the nibbles that just might be in any couch potato’s snack food repertoire. Pretzels are both ground to form a roux for thickening, and added whole over the top as a crunchy garnish. Velveeta, the cheese that melts like a dream, combines with potatoes, sour cream, and heavy cream for an incredibly smooth soup. Beer, beef jerky, and cheese popcorn round out this wildly wonderful soup for a surprisingly delicious bowl of couch potato goodness.

Melt butter in a large pot over medium-high until foamy. Add onions and sauté until translucent, 3 minutes. Add garlic and sauté until fragrant, 30 seconds.

Stir in ground pretzels to coat the onions.

Deglaze pot with beer, scraping up any brown bits. Add broth, cover pot, bring to a boil, and cook 5 minutes. Add potatoes and cook until nearly fork-tender, 1012 minutes.

Whisk in heavy cream, sour cream, and cream cheese until cream cheese is nearly melted, about 3 minutes. Whisk in both Velveetas until melted, 3 minutes.

Stir in beef sticks, and simmer soup, stirring frequently, until heated through.

Garnish servings with scallions, popcorn, and pretzel twists.

Create a “flour” by crushing pretzels, then use it to create a flavorful roux to thicken the soup.

To complete this couch potato theme, add the smoked beef sticks or your favorite snack meat.
